Somen- cold noodles for summer


It's been raining a lot in western part of Japan because of the stationary front. There were some land slides this year as usual and many people were stuck in their town. This is the Nagano case today.

If a land slide occurs, houses near the mountain can be easily destroyed so people who live there have to take a refuge at a school or another public facility. They have to sleep under stress and fear for nights...

Today I will cook noodles called 'somen'. The basic way of cooking somen is very easy. Boil. Of course there are another ways to eat as well but this time I will cook the basic way. You can find somen anywhere at supermarkets in summer in Japan.

Ingredients:
dried somen (Japanese thin noodles made of flour)
soy sauce (3tbsps)
mirin (3tbsps)
soup (1cup- dried bonito or fish-based stock)

1- Make the sauce. Boil the soup, soy sauce and mirin. Cool it down.

2- Boil the somen and wash it in the cold water.

Before you bring the somen into your mouth, put it in the sauce like soba.
